News from our Food Pantry  

 
THE CROP HUNGER WALK OCTOBER 18th at 1:00 pm.

Starting @ Wapping Community Church in South Windsor. We Walk to Evergreen Walk, through the plaza and back to Wapping Church. MACC would love to have a group of Volunteers and friends walk with us OR walk the 2.5 miles on their own!

“Feed the hungry”. John and his beloved wife, Mary, loyal supporters of MACC Charities emergency food pantry for many years, always added these words to any note they enclosed with their gifts. The last card I received was on Saturday, October 4, two days after John had died. I hope many of us will respond to John’s ask, “I will”.

Got Gift Cards? This pandemic’s not stopping our 3rd Annual Joy of Community Sharing Program and you can help. We are counting on our community to donate gift cards to local Stores like, Walmart, Target, Kohl’s, Game Stop, and Marshalls in increments of $25.00 to allow our families to self-select a holiday surprise for a loved one in their home.

I love everything about fall, the incredible smells of apples, cinnamon and pumpkin spice, the warm colors of the changing leaves, and of course the soups and stews that one can make in crock pots.
I will be sharing recipes with you over the next few weeks that will highlight chilies, hearty soups and stews.

Shout Out to the Russell’s! Dave has been a loyal volunteer for over 20 years and we have had the honor of meeting four of his grandchildren. Victoria, Samantha, Evan, and Chance will continue with he and Grandma Ruth’s tradition of GIVING back to its community. Their dedication and eagerness’ to jump in on projects really brings MACC’s Team together.

Tears of Joy erased any need for words to express the heartfelt appreciation I received this past week from a single mother of three who received a MACC starter kit. The starter kit included essential kitchen items including a microwave. The family is able to start a new chapter in life all thanks to the generous donations by our community.

We’re on a roll and getting rave reviews from our customers on this week’s special “duck rolls”, made from scratch by Bee and Michael, our culinary interns. They had fun using duck meat in this creative and tasty manner. Stop in and try them before they are gone. In case you miss them, we are happy to share the recipe.

This week’s Recipe

Duck Spring Rolls

Tools needed: 
 
Frying Pot, Good Metal Tongs, Candy Thermometer/ or one that will reach over 350degrees.
 
 
Ingredients:
 
For the filling:
2 TB oil for Sauté
1/2 lb Pulled Duck, or other meat of choice.
1 cup cabbage shredded
1 cup carrots shredded
1/2 tsp five spice seasoning
1-2 cloves chopped garlic
1-2 tsp chopped cilantro
2 tsp honey
Dash Siracha hot sauce
Salt and pepper to taste
 
Egg Roll Skins/Wrappers
1-2 lg eggs for egg wash
1 Qt of canola or other oil suited for frying
 
Method:
 
Sauté your cabbage and carrots until tender, add in chopped garlic and sauté a few minutes more. Add honey. Take off heat and season with Siracha and Five spice, add cilantro, and salt & pepper. 
 
Cool the mixture.
 
Lay out your egg rolls wrappers and put a small amount in the center of a diamond, not a square on the layout.
 
Enjoy and as always happy cooking.
