Breakfast is served! The smell of fall harvests filled my kitchen with this delicious Buttermilk Pumpkin Pancake recipe. For added flavors I created a Maple Cranberry Syrup that I drizzled on top. My daughter a bit reluctant, dove in when topped with whipped cream. Are you enjoying similar recipes? Share your pictures you created from following our MACC Minute. Facebook

Recipe: Buttermilk Pumpkin Pancakes

1 cup all-purpose flour
2 tablespoons white sugar
1 tablespoon pumpkin pie spice
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
1 cup buttermilk
½ cup canned pumpkin
¼ cup canola oil
2 large eggs
1 teaspoon vanilla extract
Nonstick cooking spray

Step 1
Whisk flour, sugar, pumpkin pie spice, baking powder, baking soda, and salt together in a large bowl. Whisk in buttermilk, pumpkin, oil, eggs, and vanilla extract until well blended.
Step 2
Spray a large nonstick griddle or skillet with cooking spray. Heat over medium heat.
Step 3
Pour batter by scant 1/3 cupfuls into the hot skillet, working in batches. Cook until bubbles form on the surface of pancakes and bottoms are lightly browned, about 1 1/2 minutes per side. Repeat with remaining batter, spraying the skillet with cooking spray between batches as needed. Serve warm.

Cranberry Maple Syrup
¾ cup pure maple syrup
1 cup fresh or frozen cranberries, divided
1 tablespoon unsalted butter

Step 1
Bring maple syrup and 3/4 cup cranberries to a boil over medium-high heat. Reduce heat to low, and simmer 3 minutes or until cranberries pop. Crush cranberries in saucepan using a spatula. Stir in remaining 1/4 cup cranberries; simmer just until they begin to pop (about 2 minutes). Add butter, and stir until melted.

Have you ever asked yourself why you chose the profession you are currently in? My desire to help people has always been the driving force in my life. Outreach allows me to continue doing just that. Whether it’s weekly outreach, putting together a starter kit, or engaging with you on a daily basis. Being of service is what keeps me motivated.
