I am overcoming the struggles of surgery through positivity and prayer. I am doing well with physical rehab, participating actively, and taking doctors’ orders seriously. Recovery in the hospital and beyond, is a long, involved process. My recovery journey resumes and I continue to make positive strides to soon be back, better than ever. Rome wasn’t built in a day!

This week, I would like to give a huge thanks to Ruth Spellman. Ruth is one of the pantry’s volunteers who comes in a few days a week and helps with various jobs within the pantry. When she hears about a need she quickly responds to meet it. Ruth’s pleasant spirit and willing heart exemplify a true MACC volunteer. #GoRuth

For a team to function properly, we must all have clearly defined roles. But, what happens when that role is vacant or backed-up for whatever reason? Staff at MACC have cross trained together in each department to step in when the extra hand is needed to ensure the work gets done. A willingness to work together and achieve our goals.

When I create the monthly menu, there are some dishes that I add on that, quite frankly, I look forward to making and, let’s be honest, tasting as well. BBQ Pork Spare Ribs was one of those additions. Messy but delicious. We applied a nice wet rub and cooked them for about 2 hours. The final product was absolutely mouthwatering.

We are 3 days from Super Bowl LVI, and even though my favorite team isn’t playing, it reminds me of a quote from my favorite coach. A quote that we all sometimes need to sit back and reflect upon. “We would accomplish many more things if we did not think of them as impossible” -Vince Lombardi. Don’t let IMPOSSIBLE win.
