Passing on a heart for good work to the next generation was motivated by parents who have supported MACC’s work for years and want their child to do the same. They recently inquired about volunteer positions available to their son. They thought an experiential connection with MACC would far exceed their words of encouragement to give back to the community.

At MACC this week, I decided to whip up Cilantro and Red Wine Braised Chicken Thighs for lunch. I roasted up shallots and garlic cloves for added flavor. Normally I’d serve this dish over Jasmin rice, but instead I cooked some baked potatoes and just let the broth from the chicken wilt down some fresh baby greens for color!
