MACC Helps with Poverty

Thanks to the generosity of our community, our pantry shelves are full of beans, tomatoes and pasta. What better way to warm your bellies on these icy evenings than with a hearty bowl of Pasta e Fagioli? We will get our families started with the base ingredients and recipe and leave the rest up to them. Keep warm and enjoy.

It’s a SNOW DAY!!! MACC follows the Manchester Public School’s inclement weather schedule for are day to day administrative programs. This is for every department EXCEPT our essential service to providing lunch in our community. This past Friday, staff came together to assist the Community Kitchen in getting bagged lunches to 32 individuals who came out in the blistering cold.

This past week Dan, one of our volunteers, shared with me a ‘Hoisin Meatloaf’ recipe that he had made at home. Personally, I’ve never tried it but he had great feedback on it so I decided to add it our February menu. I’ll try and replicate the original recipe. Hopefully the community and our local seniors will enjoy it too.

Hoisin Meatloaf
Ingredients
1 ½ pounds ground beef
½ pound ground pork
3 slices bread, broken up into small pieces
2 eggs, lightly beaten
1 small onion, finely chopped
2 stalks celery, finely chopped
3 tablespoons soy sauce
1 tablespoon minced fresh ginger
2 tablespoons hoisin sauce
½ cup hoisin sauce
2 tablespoons ketchup
 
Step 1
Preheat oven to 350 degrees F (175 degrees C).
Step 2
In a large bowl, mix together the beef, pork, bread crumbs, eggs, onion, and celery. Season with 3 tablespoons soy sauce, ginger, and 2 tablespoons hoisin sauce. Pat mixture into a shallow 2 quart baking pan.
Step 3
Bake in preheated oven for 40 minutes.
Step 4
Drain grease from pan. In a small bowl, mix 1/2 cup hoisin with 2 tablespoons ketchup. Spread over top of meatloaf. Continue baking for 20 minutes or so. Remove from oven, and let rest for 5 minutes.

As the year changed, so did our weather. A morning of treacherous icing, to a morning of exceeded snow fall amounts. While the weather is unpredictable, the services of MACC are not. Throughout this tough weather, Outreach continued as individuals were sheltered, meals were prepared and distributed, and our families’ needs were met with the predictable consistency of MACC Charities.

Please welcome our all new Garlic Sage Penne! This flavorful pasta dish consists of Ground Sage Sausage, Roasted Butternut Squash, Truffled Portobello Mushrooms, and Baby Kale, in a Garlic Sage Cream Sauce finished with Shredded Parmesan. This dish can be substituted with Gluten-Free Penne for an additional charge. Bistro on Main is open for dine-in or take-out Tuesday through Saturday!
